Blackberry Pickle

This pickle is a delicious treat to have with a ploughman's lunch.



you'll need -

  1. 2 lb blackberries (1 Quart)

  2. 1 pint white vinegar

  3. 2 lbs sugar

  4. 1½ oz allspice

  5. ½ oz ground ginger



  • Sprinkle the ginger over the blackberries and leave to steep for 12 hours.

  • Bring the vinegar to the boil and add the blackberries and sugar.

  • Stir well and boil for 30 minutes.

  • Leave to cool and add the allspice.

  • Mix well and place into sterilised jars and seal well.
