Chocolate and orange potato cake
Sounds strange tastes wicked!
Serves a family of 4
Ingredients
you'll need -

120g/4oz potatoes, boiled, peeled and
mashed

6oz butter
-
225g/8oz demerara sugar

3 eggs, beaten
-
110g/4oz plain chocolate, melted

1 orange, rind and juice
-
225g/8oz self raising flour
-
30g/1oz cocoa, sieved
Preparation

Preheat oven to 180C/350F/Gas 4.

Grease and line a 24cm/9½in cake tin.

Cream the butter, potato and sugar
until light and fluffy.

Beat in the eggs.

Stir in the chocolate and orange rind
and juice.

Fold in the flour and cocoa and turn
the mixture into the cake tin.

Cook for 30-40 minutes.

Cool and dust with icing sugar or
serve warm with cream.
