New Potato with Mushroom & Tomato Gratin



For a family of 4

- you'll need

  1. 1 lb/450g New Potatoes, peeled and cubed

  2. ½ lb/225g Button Mushrooms

  3. ½ lb/225g Roma (Plum) Tomatoes, quartered

  4. 1 tbsp Sunflower Oil

  5. 1 Onion, chopped

  6. 1 tsp Nutmeg

  7. 1 tsp salt

  8. 1 tsp Black Pepper

  9. 1/3 cup half and half cream

  10. 1 tbsp butter

  11. 2 tbsp all-purpose flour,

  12. sifted 1 tsp salt

  13. 1 cup Milk

  14. 1 cup cheese, grated




  • Preheat over to 375 F/190 C/Gas Mark 5.

  • Boil new potatoes, mushrooms and tomatoes together until tender, (about 15 minutes). Meanwhile, heat oil in a pan. Add onion and fry for 3 minutes, until soft. Set aside.

  • Melt butter in another pan. Add flour until a thick paste is formed. Slowly add the milk until a smooth runny sauce is formed. Add salt and pepper. Set aside.

  • Heat sauce on medium heat, stirring constantly until thickened. Remove from heat and add cheese. Stir until melted. Put vegetable mixture in a greased ovenproof dish. Pour over cheese sauce and bake for 20 minutes until golden.

  •  Serve hot as a great accompaniment to chicken, steak or bacon.
