Leek and Potato Soup

 

Ingredients

 

you'll need -

  1. 1 large onions

  2. 4 medium to large potatoes, peeled and diced

  3. 6 large leeks, washed and sliced

  4. 1 1/2 pint ( 850ml ) chicken or vegetable stock

  5. 1 tablespoon of oil

  6. salt and pepper to taste

  7. a drop of cream, (optional )

 

Preparation

  • Sweat the chopped onion over gentle heat in the oil until glazed

  • Add leeks, potatoes, stock and salt and pepper simmer gently until soft

  • Liquidize the soup 

  • Check seasoning

  • Add a teaspoon of cream or some croutons

  • Serve either hot in Winter or cold in Summer
