Courgette Brownies
Ingredients
you'll need -

2 cups
plain flour

1 teaspoon
salt
-
1 1/2
teaspoons baking soda

1/3 cup
unsweetened cocoa powder
-
1 cup
granulated sugar
-
2 eggs
-
2 cups
grated courgette
-
1/2 cup
vegetable oil
-
1 teaspoon
vanilla extract
-
1/2 cup
chopped walnuts
Preparation
-
Preheat oven
to 350 deg F, 180 deg C, Gas Mk 4.
-
Grease a 10 x
15 inch Swiss Roll tin.

In a large
mixing bowl, sift together flour, salt, soda, cocoa and sugar.

Combine
eggs, courgette, oil, and vanilla; blend into dry ingredients.
-
Stir in
walnuts.
-
Spread out in
an even layer in the tin.
-
Bake for 20
minutes in preheated oven.

Cool in the
pan and then cut into bars.
