Butternut Squash Soup

 

Ingredients

 

you'll need -

  1. 1 Butternut Squash, seeds removed, peeled and cubed

  2. 1-2 small onions, finely chopped

  3. 2 celery stalks, chopped

  4. 2 carrots, chopped

  5. 1-2 garlic, crushed

  6. vegetable stock

  7. 1 teaspoon of mild to medium Curry powder

  8. 1 tablespoon of olive oil

  9. salt and pepper to taste

  10. 1 tablespoon of copped parsley

 

Preparation

  • sweat the onion in the olive oil until transparent

  • add the cubed Butternut Squash and fry gently

  • mix in the celery, carrots and crushed garlic

  • stir in the curry powder

  • add the stock

  • leave to cook gently until soft

  • blend it all together

  • add more water or stock if needed

  • season to taste
